Mr. Potato Salad

I was never a big fan of potato salad because it tasted too much like mayonnaise, I prefer to add some chopped pickles and bits of celery to add a bit of crunch and a sour taste to take the edge off of the mayonnaise.  If you're not a big fan of the dilly-sour taste of pickles, you can try a sweet pickle instead.  This recipe was used when we went to an Oscar potluck party.  Since the theme was the Oscars, your dish had to reflect one of the nominated films.  Since I hadn't seen many of the films, I went for the obvious, Toy Story 3.  So here is our recipe for Mr. Potato Head Salad with bits of Hammy and Little Green Men.

2 pounds Yukon gold potatoes
2 green onions finely chopped
4 stalks of celery  
1/2 cup small red onion, chopped 
1/4 cup finely chopped dill pickles with 1/4 cup juice, about 2 pickles (can substitute 3 tablespoons of dill pickle relish)
2 1/2 cups mayonnaise
1/4 cup Dijon mustard
1/2 bunch dill, chopped
1/2 lemon, juiced
Bacon Bits
Freshly ground black pepper 
Kosher salt

Put the potatoes into a big saucepan of cold salted water. Bring to a simmer.
Cook the potatoes until a fork poked into them goes in without resistance, about 3 minutes longer.
Drain the potatoes in a colander and let them cool.
Stir together the mayonnaise, mustard, pickles and their juice, red onion, celery, dill and lemon juice in a bowl large enough to hold the potatoes.
Cut the potatoes into rough chunks, add them to the bowl and toss to coat with the dressing.
Season, to taste, with salt and pepper.
Garnish with bacon bits, green onions and sprigs of dill.
