Crockpot whole chicken
Instead of making a trip to Costco to get a roasted chicken, I thought I would try and do it myself. I was a bit skeptical and nervous, but it turned out wonderfully. The spices that are rubbed onto the chicken, help add some flavor to the the skin as it crisps.
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. dried oregano
1/2 tsp. chili powder
1/2 tsp. pepper
1/2 tsp. paprika
2 tsp. fine grain salt
1 whole chicken
1 onion, quartered
2 tsp. olive oil
Directions:
Stuff the onion in the cavity and tie the drumsticks together with twine.
Place chicken in crockpot. *
In a bowl, blend the spices together. Mix well.
Drizzle olive oil over chicken and rub into skin.
Take spices and cover chicken entirely.
Cover crockpot with lid and set on low for 4-5 hours.**
*If you don't like your chicken dripping in drippings, take some aluminum foil and make 4-5 balls and put in the bottom of your crockpot then place your chicken on top of them.
**Cooking times may vary depending on your crock. Be sure your chicken is thoroughly cooked before serving.
