Camping Recipe Garlic and Parmesan Potatoes

This continues last week's camping adventure.

Garlic and Parmesan Potatoes

Ingredients:
Non-Stick Aluminum Foil
vacuum packed potato
2 medium russet potatoes, sliced (I used my mandoline)
2 tablespoons of butter
4 cloves garlic, finely chopped
1/2 chopped medium onion
Salt and pepper
1/2 cup shredded Parmesan cheese

Directions:
In the campground firepit, be sure the coals are white hot.
Place the potato on the non-stick (dull) side of the foil.
Rub with butter.
Top with onions and garlic.
Sprinkle with salt and pepper.
Bring foil sides up and double fold top and end to make a foil pocket.
Grill 15-20 minutes or until potato is soft.
Top with Parmesan cheese before serving.
You can do this in the oven too, or even your BBQ grill.
Preheat oven to 450°F or grill to medium-high.

Bake 30 to 35 minutes on cookie sheet in oven OR
Grill 15 to 20 minutes in covered grill.
Top with Parmesan cheese before serving.
